It's quite simple. Rather than going into a litancy of why the food couldn't possibly taste the way it did to a customer, simply offer a redo. If that redo yields the same taste result, then it's time to suggest an alternative, if the customer hasn't become too fed up to try something else. It doesn't take much to please, but even the manager didn't do the most straightforward thing. Is it the old solo diner prejudice? If so, too bad. Great tipper, and easy to please.
