Northern Waters Smokehaus is pretty much the only place we KNOW we are going to visit when in Duluth. The smoked white fish from the lake is awesome and the sandwiches are tasty. But the real kicker, and something that it took over 3 visits (read- 500 mile drives from Omaha each) to try, was the salamini...mother of god...the salamini. Every time we visited from over the last few years, I've wanted to try it. Each time it wasn't available. When the Diners Drive Ins and Dives episode came out in 2010 and showed how it was made, that reinforced the need (not want) to have it. Luckily on our last visit in May, the salamini was available... It was, hands down, the best cured salami i've ever had. The fennel and lactic 'tang' made it irresistable. What's best, if you can stand to wait, was letting it warm up and get just slightly above room temperature so the fat slightly melted, allowing all the flavors to just go nuts.
The only gripe is the price of the sandwiches vs the amount of fish on them. I ordered the Sitka Sushi and although the flavors of the ingredients were killer (the bread is ridiculously good), it could have used another ounce or two of salmon.
There is no doubt that we will return here if we visit Duluth again.
