Made's Warung has been around for as long as I've been going to Bali (20+ years) and continues to be a favorite place to bring "first-timers" and to go and fulfill my cravings for sambal matah.
Since I stay in Seminyak I go to the branch on Jalan Seminyak, especially now that Bali's traffic has gotten even worse than it was just a few years ago. In the last few years the restaurant has literally doubled in size and added pizza (dinner service only) to their already extensive menu.
By extensive, I mean you can order from a wide variety of Balinese specialties, as well as, western fare and even sushi! This is great if you have a big family with a few fussy eaters, or some visitors that just refuse to eat local even when venturing out of their home country for the first time.
I usually order the deluxe version of the Nasi Campur or Grilled Tuna, or both if I'm really hungry, with fresh mango juice. No matter what I order, I always include a side of Sambal Matah. This sambal is made with Terasi, bali chilis, torch ginger flower, lemon grass and shallots all lightly fried in oil. There are many variations on making Sambal matah but I really like Made's almost as much as my home made version.
If you have a special occasion or a special guest I suggest you call ahead 24 hours and order their Bebek Betutu. This heavenly spiced traditional dish is made from a whole duck that is rubbed in spices, like ginger, galangal, lemon grass, chili, turmeric, and then wrapped in banana leaves and cooked slowly for several hours. The traditional cooking method is to bury it in a fire pit which you used to be able to get in Ubud, but most places, Made's included does theirs in the oven...still worth the wait though!
One more tip: If your driving or have a car and driver, save your receipt to show to the parking lot attendant for Free Parking
