this quintessentially-filipino (particularly kapampangan) restaurant where the food comes 1st & foremost deserves all the praises it gets. everyday pampango fare is turned into a culinary delight by claude whose creativity balances flavours just right. ordinary top equality indigenous main ingredients are enhanced by basically pinoy but asian/european-inspired sauces. result: very tasty & flavourful, extraordinary & certainly outstanding. I would not call it fusion as the dishes are not a meld of various flavours; they remain very filipino.
will be appreciated by Filipinos & foreigners who wish for creative, elegant & refined cuisine.
my friends treated me to a 10-course menu de dégustation w/commentaries & anecdotes by mary ann (wife/hostess) before each course. of course, the meal lasted for several hours but so what? that's how gastronomic meals usually go & w/the outstanding food & excellent company, whose counting!
so be prepared to spend a big part of a day incl. travel if from manila.
the restaurant ambiance is unpretentiously simple/rustic w/plants & huge electric fans providing a bit of comfort. just like dining in an upper middle class filipino home, sans AC. an inspired touch was frozen face towels provided to freshen up throughout the meal.
price-wise, on the higher end of the scale but worth every centavo. splurge for a special occasion or simply to satisfy that craving no other restaurant, filipino or otherwise, can assuage.
downside: high pitch promotion of cloud 9 products!

“Am not sure what the hype is about.”

Make sure the next time you come here you have eaten, otherwise your tummy will go growling and your head will start aching because of hunger and the heat. Am not sure what the hype is for Php2,500 per person. when the amount of food they feed you is not even enough for you to feel half filled. When you ask for additional servings, they hesitate on doing so as they are more interested in making sure they are within the timing of their agenda. And the lady owner is more interested in talking about their food presentation and selling their bottled products. Really, who eats for 4 to 5 hours? And for this amount of money, one expects to be filled and be served in a comfortable environment.

“Nyaman!”

Excellent food, great hosts! We went to Bale Dutung on a humid Saturday, but we completely forgot about the temperature when the food came. Claude and Mary Ann Tayag were truly gracious hosts; with Mary Ann giving telling stories/histories of the each dish we were served. If with not-so-health-conscious friends, go get the lechon menu.

“Best Filipino food!”

If you are a tourist Bale Dutung is a must visit place. The hosts are very welcoming and they explain the food you are eating and the atmosphere of the whole place is just amazing. If you walk around you can also see some of Claude's artworks like the wooden carvings and such. Its a really great place for special occasions because its a really big treat just to eat their food. I loved their Lechon skin, it was so crisp and unforgettable. You have not completed your trip to the Philippines if you have not gone to Bale Dutung.

“Food and culture tour all in one”

Beautiful place!! Mary Ann and Claude are awesome hosts, warm and friendly. They make you feel like you've known them you're whole life. You get a tour of their native home and property. Every piece of their house has a story. They serve authentic Campampangan and Filipino fusion food. Ask for the macademia nut sans rival and buco ice candy, you will be very very happy!
