This restaurant is one of the places that we will take out-of-town guests. Take the Nambe exit for the High Road to Taos, then look for the signs for the Chimayo turn. As you crest the hill and gaze down into the small green valley surrounded by the dry and barren hills, you will probably wonder how anything could thrive in that small oasis...but you will be surprised! The village of Chimayo offers an experience of small town New Mexico while the food at Rancho de Chimayo will deliver hearty new-found favorites for you if you are a new-comer. The portion sizes is plenty - even for the person who has been sight-seeing and skipped a meal. Flavors are grounded in the history and location which you will realize as you slow down, relax and become a mindful eater. This is comfort-food from another culture. Beware of the chile if you are not used to it - ask the very friendly for it on the side and use them as resources if you are not familiar with the menu items. And..don't leave with out trying the prickly pear in either the iced tea or a margarita. Enjoy!
