Paisano Café in Mesilla, NM (suburb of Las Cruces, NM) offers food unlike any other cuisine in this restaurant-rich town. The owner-chef is Mexican-trained and his food is not the usual "border Mexican" style this community is accustomed to. It is "fine dining" at its best and features flavors and sauces not found anyplace else. Three of us each had a different entre and each was tasty, beautifully presented, and honest to the cuisine it represented (true, sophisticated Mexican). There was a Tampiquena steak, shrimp, and salmon (cooked perfectly) with pipian sauce. The wine list offers a satisfactory selection. The salad was fresh and perfectly presented with a yummy house dressing of lime/cilantro. The appetizer of sautéed mushrooms was delicious with just a hint of spiciness. Prices are modest and the atmosphere is ultra-friendly in this family-run restaurant. The only "negative" is that it is in need of sound-dampening because the normal restaurant and dining noises seem loud and harsh, even though it is not "noisy".
