Finding open restaurants in Ruidoso can be a challenge. Cornerstone is worth going to, but they close at 4 so make sure you plan your trip accordingly. We both had the pulled pork omelette which had chunks of pork and shredded cheddar cheese. It came with potatoes, and for an extra dollar, they will load them up with large pieces of bacon, shredded cheese, and topped with scallions and sour cream. No calories there. The omelette also includes either homemade toast or a biscuit. Everything was delicious, but we couldn’t finish it so took half home. Prices were reasonable, and our waitress, Jasmine, was attentive and helpful. Their bakery was amazing but as we were stuffed from our meal, we had to purchase some muffins to take along.
