My husband and I happened to spot the Downtown Bistro when we were in Taos and were a bit hungry for a light lunch. It was late for lunch and there was only one other table occupied as well as some patrons at the bar. We were promptly seated and our server came immediately with water and a list of specials. She was so enthusiastic about the Chicken Panni and said it was large enough to share, so we ordered it. Meanwhile, she had brought delicious warm bread. There was oil and vinegar on the table, but she stopped by to let us know there was also a bar of special flavored oils we could taste. My husband went and chose one with peppers that had a flavor so good we ended up dipping our sandwich in it, too. The panni was delicious, made with real roasted chicken, cheese and roasted pepper. It came with greens on the side and fries. The service was really good. We were visiting Taos on vacation, so unfortunately we won't be able to go back to try other menu options, but if we could we definitely would.
