What a great B&B the owner and her family were just amazing, our room
Was perfect and the breakfast 5 stars!
This B&B in the perfect location just outside the center of Hudson far enough to feel you are upstate and they have a great pool, can't wait to go back!

My husband and I spend a spectacular weekend with Mary and her family. The bed and breakfast was refreshing, immaculate and had all the amenities we could have wanted. Being on a working farm with organic vegetables and animals made it all the more interesting. Our room was spacious and had a large bathroom with a wonderful old fashioned tub. The towels and linens were lush and elegant. I appreciated the effort to use natural products. The common areas were warm and inviting and homemade snacks and foods, such as fresh fruit from the farm, always available. What made our stay even more memorable was that Mary and her staff went out of their way to prepare food items that we could enjoy on our plant based, whole foods diet. We were in Hudson for a Farms to Forks weekend. Mary even used my recipe for a dessert and had it waiting for us after we returned from our event. They made fresh salsa and even prepared a dinner right from the farm ingredients that they grew right outside the door. We even enjoyed tomatoes from their farm at home the following week. We certainly would stay at this bed and breakfast again as they were the perfect hosts with a refreshing inn in a most scenic setting. It was a pleasure to talk with Mary's son, Ted, whose conversations made our stay even more memorable. I highly recommend a stay at this bed and breakfast.

Room Tip: All the rooms seemed good. Only some have a private bath.

I'll echo the word eco-friendly from a previous review. It seems that everything we ate, and it was all very good, was grown on the property. They have have cows, chickens and pigs out in the back and two small dogs in the house. You can just ignore the animals and hang out by the pool. In talking with Mary, one of the proprieters, no food went to waste. What humans wouldn't eat, the animals would. They seem to have a great sense of recycling. The house is well situated to be right near the Taconic Parkway exit and about a ten minute drive to Hudson, where you can partake of funky galleries, unique restaurants and nightime activities. Though it was raining Saturday morning, it was very comfortable to just hang out and talk to the other guests. We highly recommend.

Thanks to Mary & Bill Koch, I just came back from a fabulous weekend, spent at their creatively named B&B, Thyme in the Country....what a beautiful place, where everything tastes & smells so good!..Hanging out with their cows/pigs/chickens/dogs & cat, while laying poolside by their salt-water pool, is a recipe for total relaxation...if you need to get the heck away from the everyday chaos/anarchy of NY, then this is the place to come!..Thanks, Mary & Bill for being so warm & personable!

My husband and I aren’t usually B&B fans (often too frilly for us), but in planning a last-minute, one-night getaway we chose Thyme in the Country and were happy we did. Hosts Mary and Bill have a roomy house on 5 acres of pastureland where they raise a couple of Dutch Belt milk cows, a bunch of chickens, and grow their own vegetables and herbs. Mary is happy to share info, maps, and recommendations on things to do and places to eat in the area. She’s also a fabulous cook: She whipped up a nice apple pie the night we were there and for breakfast the next morning, a delicious spinach casserole served with baked sweet potatoes, homemade apple muffins, fresh-squeezed juice, and coffee.

We stayed in the newly renovated Rose Room: spacious, ultra-comfortable bed and bedding, a couple of nice armchairs, a fireplace, a radio, books, and three windows with views of the meadows. (When Mary and Bill asked what we thought of the new room, we did share our one negative – that the over-the-bed lighting was a little harsh and could maybe benefit from a dimmer switch.) The private bath was also roomy, outfitted with natural products and big, fluffy towels. Common areas were great for lounging – big couches, fireplace, TV, library.

It wasn’t warm enough for the pool when we were there, but after a long drive, we had fun walking through Bill and Mary’s pastureland, saying hi to the cows, and gathering a couple of dozen eggs from the chicken coop. At checkout, they noticed that our rental car was a hybrid, and were kind enough o reward us with a 10% discount.

Another poster mentioned that the B&B was hard to find (we learned there are restrictions on signage). My tip: Once you’re on Fire and Game Road, just look for the address “671” on the mailbox. Even at night, we had no problem.

Our weekend getaway and stay was like coming home! Mary, Bill and their team made us feel so welcome, and they were incredibly thoughtful and generous--from making special vegan and gluten free meals, to leaving us little sweets treats, to building us a warm and beautiful fire to providing natural products in the restroom. We simply can't say how much we enjoyed our peaceful and nature-filled stay at Thyme in the Country. Thank you Mary & Bill! You and your B&B are simply beautiful!

The owner, Mary is as welcoming as can be. She was accommodating to our food allergies as well as being vegetarian.
The positives: You really have full access to the house. There are 3 sitting areas. One has a wood burning stove and the other a fire place. She has books, games and even a piano to use. Breakfast is served between 8:30 and 9:30 but if you want to eat later it doesn’t seem to be a problem. The room (rose room) was a very generous size and the bed was comfortable. Also, there is tea and coffee available at all times as well as little cookies which is a very nice touch. All the food is farm fresh. The eggs are from Mary’s chickens and so is the milk. If you can’t drink whole milk, just tell her ahead of time!

Disclaimer: I feel bad saying anything negative because Mary was so nice however I feel it’s fair to point out certain things.

The negatives: Check out time is at 11am. We thought if we had our room cleaned out we could hang out downstairs and read but we were asked to leave. (In a nice way but still a negative in our eyes) We were looking forward to just reading in a quite comfortable place. Also, this is not a bed and breakfast that affords much privacy once in your room. The doors are not butt with the floor and you can hear everyone upstairs. People were respectful but you couldn’t help but hear them which means they could hear us too. Finally, the water pressure was not so great in the shower.
Neutral: The light comes in the window treatments in the morning. For some this is great, for others not so great.
Warning: There are two entrances with the same number. The bed and breakfast has a relatively open area when you drive in with the house on the left. If you see a garage in front of you, this is not the right entrance!
We found a lovely place in Hudson to hang out in called Cafe le Perche on Warren Street. We read and had delicious food too and luckily there was a fireplace there as well. If you go this place, read about it and make sure you ask to see the incredible oven. They have an interesting story!

Thank you so much for your comments. Although the B&B and the Eco-cottage are 2 separate entities with very different amenities we offer the eco-cottage as an optional guest room when the B&B is fully booked or as an alternative, closer to nature/ farm experience type of stay. Guests staying in the eco-cottage can be assured that their impact on the environment is truly minimal as all the eco-features that you mentioned including solar hot water/electricity, organic gardening/ minimized use of petro-chemicals and fossil fuels, and recycled, reused and restored materials are all incorporated into your stay with a significantly reduced room rate.
