Last night Diana and I (Memo) responded to a personal invitation to attend a Grand Re-opening of one of our favorite lunch spots. The invitation was extended by Ray and his wife Violetta, proprietors of Shambhala. Since opening in November 2011, the restaurant has quickly become a favorite spot for locals and visitors alike as a result of fabulous breakfast and lunch offerings. Last night the establishment added mouth watering Mexican specials to a full on dinner service. The evening menu reflects ten entres ranging from Arrachera Steak to Spring Rolls. Diana selected the latter while I thoroughly enjoyed the Arrachera Fajitas. The beef was marinated, tender and perfect to more than fill a basket of fresh tortillas. Diana managed to "yum" her way through three generously large Spring Rolls sliced in half and presented in a manner only an expert restauranteur could craft. We topped the evening off by sharing a phenominal cheese cake sprinkled lightly with cinnamon and dribbled with chocolate. It doesn't get any better than that. Buen Provecho!
