Treated my LA brother on his birthday. Four of us had chicken liver mousse and duck prosciutto. chicken liver mousse was the best not bitter, creamy, good sized proportion, followed by duck breast. the smoked salmon mousse was bland barely tasted salmon and no hint of smoke. different take on the escargot, but good instead of usual drowning in butter. the rabbit liver was ok and could have been seared. the rabbit crepinette was loose boiled meat formed into a cup without much taste which needed complementary ingredients with a different texture. the honey brine pork was too lean, looked and tasted boiled. it needed more salt or more brine time and brushed-on honey to finish. the poulet looked and tasted boiled without much taste. all main dishes suffered from lack of high heat either seared or broiled. it needed fat and skin. both suffered with vegetable puree instead of real meat sauce reduction. we ordered all the desserts and were good. overall the meal felt like eating in the health food store.
