A guy from Jersey in Dornoch? Running a restaurant? A really good restaurant? Indeed. Chris was born to be the front of house. While this is not as common in the UK this style is so common in fine restaurants in the States, Italy and France. It works here probably because of all the tourists but it also works because he is so good at it and product coming out of the kitchen backs up the boasts.
We just go with whatever he suggests and dine happy. The only drawback, and this is so common in the UK, is that the wine list is just a bit too thin (although what he does have is well chosen). Have heard they have a great lunch too (we're always on the golf course during the day) and while they are not open for dinner on Sunday he gave us several good recommendations for our meal on that night. This place is good enough to stand up in any of the foodie cities on the West Coast yet they seem to be happy in the remote town of Dornoch. Lucky Dornoch and lucky us when we come to play.
