While enjoying a few days at Red Mountain Resort, I really liked being able to eat a plant-based diet that was creative and varied. The chef was knowledgeable and enthusiastic about his dinner preparations. The lunch buffet items are color-coded to better address diner's preferences such as gluten-free, vegan, and others. There is always an enormous salad bar. The hot entrees change daily by theme, such as Italian, Indian, Mexican and so on. Table seating is available inside or outside.
