“Best Value for Dinner in Hawaii”

From the outside, Pau is a very unassuming place located in Waimea next to the more popular Merriman's. But inside you'll find a wonderful dining experience. When you walk-in there is a large counter fronting the kitchen where you can place take-out orders, and off to the right is the dining room. When we were there only two people were working, so the service was a little slow, but we were on vacation so we weren't in any hurry.

We started with a bowl of edamame (huge and seasoned with some kind of sesame dressing for $4) and the special cheese bread (delicious but the portion was very small for $7). Then we moved on to the main event...pizza. Pau's menu features lots and lots of pizzas with very interesting combinations...or you can build your own from the 30 or so toppings to choose from. They offer all the standard choices, plus lots of interesting veggies like artichoke hearts and spinach. We built our own with pepperoni, feta, pesto, and mushrooms, and it was out of this world. Everything was incredibly fresh and the pizza was huge (I think it was about $25 or so). We took several slices home to eat for breakfast and it was just as good the next day. The salads also looked delicious but we just didn't have the room.

In short, if you're looking for a reasonably priced place to go for dinner, or even a place where you can grab something to go, Pau is the place to go. The food isn't quite as good as some of the other restaurants we went to, but we also spent at least 3 times as much money at those other places.

“Best pizza on the island”

I stopped here for lunch and got the half-order pizza and half-order salad combo. It came with three generous slices of the special pizza of the day (there are usually 2 to choose from) and a fabuolous green salad with sprouts and a sweet dressing. Perfect portion size, delicious food. Price was $12 with drink.

“What a great find!”

Only ate here once, but very impressed with the meal.
Took pizza to go which came with side pasta salad and it was terrific!
Highly reccommed this place for a nice pizza!

“Great place for lunch”

Excellent healthy food with fresh ingredients, lovely people. If you want to stray from your hotel and eat at a more moderate price, this is a great choice. But it is very basic, no atmosphere.

“Mmmmmmmmmm...”

I wasn't quite sure what to expect when we looked for Pau last week. And though the directions on Trip Advisor are fine (behind Merriman's, Waimea) we still drove right past it. You can't really see Pau from the street, you see, so you have to know that it's there.

At the back of the lot containing Merriman's, with a pretty non-eyecatching front is Pau, which for all intents and purposes looks like just another pizza place. Enter and you'll see flour flying, the kitchen staff hard at work, while a case to the right offers cold beverages. To the right of that is a small dining area with about a dozen tables. It's all pretty plain-wrap, save the colorful and thought-provoking artwork on the walls, but we didn't come to Pau for elegance.

Although our server was initially a bit formal, perhaps she was taking our cue because by the end of the meal we were best of friends. We particularly liked the way her eyes rolled back in her head fondly when describing Pau's pizza. Basically, we only wanted pizza and a salad, so she offered us suggestions. On her recommendation, we opted to go with a salad called The Vintner's, described on their menu as "greens, spiced pecans, apples, blue cheese and champagne vinaigrette." A small salad was large enough for the two of us; moreover it was immaculately fresh and extremely tasty. The winelist was small and though wines were indicated only by the glass, they were available by the bottle as well. We opted for a pinot noir we'd never heard of before and found it fruity and satisfying. Worth noting, by the way, is that you may bring your own wine if you wish. The corkage fee is $10.00.

The pizza we ordered was as promised, an island style version of paper thin Neopolitan pizza with just the right quantity of cheese, sauce and toppings. We've had a whole new appreciation of pizza since traveling to Italy, so we now understand that good pizza doesn't have to be weighted down, goopy and filling to be delicious-- and the pizzas from Pau are exactly what we were after. We chose the Hamakua, a tasty mixture of wild mushrooms, caramelized onions and garlic. Delicious! I was having so much fun pointing at the variety of sweet little mushrooms on each slice, I simply had to know what they were called. Our waitress wasn't sure, instead responding by bringing out an entire bag from the kitchen, a fascinating assortment of exotic mushrooms of all sizes and shapes. No boring canned button mushrooms for these folks! When you order mushrooms, you are in for a culinary treat.

And that, I think, is what separates Pau from other pizza places. It's pizza for the foodie, pizza for the person who really appreciates quality ingredients and subtle and interesting flavors. Pau's food is the thinking person's food, food for people who appreciate something carefully thought out and crafted by a chef who obviously enjoys what he's doing and does it extremely well.

There is but one size of pizza (large) and most varieties run in the $25.00 range. Salads are in the $6.00 to $9.00 range. There are also pupus, fresh fish, and sandwiches. They are open for lunch and dinner, but close early (8:00 pm). Waimea is not a town for wild nightlife, after all... Thanks to Pau, it is also now a town for great pizza.
