This is a local noodle or Saimin stand in central Lihue. This is a locals type place, so leave your pretensions at the door. Seating is U-shaped communal style, service is brisk and stern, but the noodles are oh-so-good! Apparently Saimin is a blended style of Chinese, Japanese and Filipino noodle dishes. The noodle is a wheat-type noodle like ramen, but thicker in caliber. The "special" adds fish cake, pork meat, dumplings, a half egg, and Chinese cabbage in a salty broth.
