One can spend as much time as you like here. Spent around 2 1/2 hours on the self tour in a rushed afternoon prior to closing coupled with a visit to the zoo in the morning of same day! It was a full day, although would definitely do it the same way again as I would not have wanted to have either attraction take up more of my trip. We toured this as a couple in generally good health with no children... for a measuring tool.
There is a brief tour one can take while on the deck that will be both informative and brief (free). Ship is very large... obviously, with ample walking and plenty of stairs throughout.
The ship lies docked next to a good seafood restaurant next door, The Fish Market, where you can buy fresh seafood or enjoy a meal. We specifically planned the day to end up there for dinner after a full day.
Parking at the ship does cost (10.00 if I remember correctly) so do factor that in to your budget.
