As Chinatown turns increasingly Fujianese, Hop Shing provides a reminder of re days when Chinatown was predominantly Cantonese. The place serves excellent food. Rule if thumb - if you see a lot of Chinese in a restaurant, it us probably the real deal. Hop Shing is the Real deal.

Hop Shing has been reopened since the 14th of January 2011. The original owners (There are generally more than one owners when it comes to the restaurants in Chinatown.) lost their lease and had to close on the afternoon of June 13, 2010. I heard through the grapevine that the landlord wanted $500,000 "coffee" moola before he would agree to renew the lease. I had brunch on the 15th of January 2011. Sadly, the ladies with the carts containing the dim sum are no longer to be found. The Ha Gow has to be ordered via your waiter who got it from the steam cabinets. Beware! Now, there's only three Ha Gow per dish as opposed to four. It's not as fresh (the thin rice wraps were dry, tough and lukewarm.) since it didn't come out of the kitchen like when the cart ladies were there. I don't like ordering dim sum from the steam cabinets because --God knows how long it has been sitting there! i.e., The lackluster Ha Gow and the Shrimp Chun Fun.We also had the chow mein with broc and beef which was good as usual. That being said, it took quite a while for the dish to arrive though not sure why when the place is only 50% filled with patrons. Some of the waiters and waitresses are the same --granted, there were several new employees. They took out two of the booths toward the entrance. My dad doesn't believe Hop Shing will be as busy since the OTB next door closed their door last month.

For those who love Cantonese style chinese food, your hearts should begin pounding, the Hop Shing has reopened and it's better than ever. It has always been famous among the locals for the Sunday morning dim sum, steam cart after steam cart of bit size treats. Be prepared for sweet pork steamed buns or duck feet. This is not a yuppie buffet of tasteless offering. Do not expect tablecloths. The food is fantastic. The dinner choices are endless, Beef and Bitter Melon, Lobster (chinese style -dry), Salt & Pepper Squid, Steam Sea Bass with Ginger and Scalliions, Minced Steamed Pork with Pickled Vegetables, Duck with Plum Sauce, Shrimp with Black Bean Sause, I could go on and on. Everything was delicious, inexpensive, and served with freshly brewed tea.
