On a recent trip to New Orleans, I planned a first-night evening dinner/cook session at Langlois Culinary Crossroads and was thrilled with the experience. Our chef, Mel, was focused, entertaining and very knowledgeable about all manner of the local cuisine. She was patient and perfectly equipped to answer countless questions about ingredients and techniques and local food history. Langlois was a wonderful introduction to a week of frenzied dining around town, exploring the tastes and textures of Cajun and Creole cooking. It was interesting using (to a northerner) uncommon ingredients like cane syrup and cane vinegar, which I purchased and have used in recipes since. I particularly enjoyed the hands-on behind-the-counter contribution to the meal, which consisted of salad with jalapeño buttermilk dressing, fried okra (extraordinary technique), bacon-wrapped grilled shrimp with grits and pimento cheese, praline bites and stone fruit cobbler. My three dinner "co-chefs" and dining companions where all wonderful Southerners who love to cook, which made the whole experience wonderful for me.

I went with an old girlfriend from college to Langlois for dinner on a Saturday. I loved the history that was incorporated into each recipe. We learned about Creole vs. Cajun and just felt like the perfect way to end my trip to New Orleans. The location is beautiful. It is a little further out from all of the tourism. Our instructor made us laugh, and encouraged participation. There was plenty of room for us to ask questions and explore why each and every ingredient was added. The food was delicious. It was the perfect portion. I also loved that we were provided with a printout of all of the recipes. We shared a bottle of wine and had a fabulous time! The staff was very professional and accommodating. The staff and fellow cooking classmates took plenty of photos of us with our phones.
Pros: You can take your wine to go-- Its New Orleans! Makes for great pictures. The food was delicious and inspired us to get in the kitchen more and try some of these recipes. The staff was nice, helpful, and entertaining.
Cons: I do wish we got to take home some of the leftovers, or at least could have gotten a second helping if we wanted. There was plenty left over. Some of the equipment we used are not commonly found in an average kitchen. They were used to speed up the class.

I would recommend this class to anyone.

We were in New Orleans in June 2014 with our two teenage (18 & 19) boys for a family vacation. Inspired by the movie "Chef", I went on the internet to find a cooking class for all of us. We chose Langlois because the price was reasonable, the class wasn't too long and most importantly, we got to participate. Chef Amy and her assistant Joni were fantastic, fun and informative about food and also about all things New Orleans. My husband and boys each happily helped with a part of the meal and enthusiastically chowed down on their creations! I would recommend this experience to anyone! A highlight of our trip.
