One of the best meals ever! Try the seafood pasta, semifredo and squash flan. Extensive wine list although a little on the pricey side. Great service. Many items available in either appetizer or entre sizes. Desserts are amazing.

From the minute we got out of our car (owner and waiter were waiting for us based on our reservation) to the minute we left, Chef Robert and wife ensured we had an outstanding meal and a great dinning experience. Like in Buenos Aires where they cut your steak with a spoon, here to at the Galisteo Bistro you could cut the Lamb Shank with a spoon. Great attention to detail through out to included warmed coffee cups and dessert.

Whether in Argentina or New Mexico, do not miss the dinning experience at the Galsiteo Bistro.

Decided on this last minute and luckily we got in without a reservation. Awesome grassfed NY Strip and cooked perfect. My wife had the entree salad with crab and shrimp and loved it. Our waiter, Ben, is a delightful young man, and you knew he loved the food as he closed he eyes as he described the specials!
Great wine selections. There are lots of great restaurants in town, and this has to be in the top 3.

This is a gem of a restaurant. Owner run and managed, you are ensured of a warm welcome and excellent service throughout. The staff goes out of their way to accomodate any wish you may have. The food is wonderful and prepared in the open kitchen. We noticed many local residents frequenting this restaurant - always a good sign. The buzz is great during dinner and the restaurant is invariably full - we recommend you reserve a table. Dinner at the Galisteo Bistro was one of our Santa Fee highlights. You cannot go wrong at this place.

We stayed at the Inn of the Governors just around the corner and went for dinner on a Friday night without reservations. We were seated in a short time. Many locals seem to eat here. Only opened a few nights for dinner. Make a reservation and GO. Delicious, coming from an Italian cook.
