I did this tour a few weeks ago while in Sitka. It is a nice walking tour, about 2.5 hours, that gives you all sorts of different perspectives about salmon - from the ecology of the forests that support salmon streams to the business of salmon fishing in a sustainable way. Our guides, Helen and Elizabeth, were very knowledgable and we really learned a lot. Plus, we were outside the whole time walking - not a strenuous walk, but it was nice to learn about a place through the perspective of salmon. I've used the information I gained on the tour at many other places on my Alaska trip.
