Monsieur Ange Canonzi is both a great chef and a wonderful person. His restaurant is at least as good as the Michelin 2 stars Casadelmar in Porte Vecchio which is twice as expensive. My wife and my daughther, who is now 12 years old, have been spending about a week in Ile Rousse during the last five years and we usually dine 3 times at Pasquale Paoli. We love sitting at their terrace, overlooking the rectangular town center and sip our coctails while admiring the evening scene and colorful, specially designed water glasses which adorn every table. I love inhaling the scents coming from the charcuterie table as the chef/owner selects amazing quality lonzo/saucisson/prosciutto/coppa. The choiciest of Corsican charcuterie is not only the best in France but also compares well with the best Italian and great Spanish jamon bellota. We always divide a charcuterie plate with my wife and then select the dishes. They arew written on a blackboard and there are also daily specials. The chef excels in vegetables, fish, shellfish, pasta. You can special order spiny lobster (langouste) a l'hydromel which is stunning. Monsieur Canonzi always buys daily fish and his cooking reminds me of the best Italian cooking combined with French precision. Monsieur Emanuel, maitre d' speaks
English and can help you with selections. The cheese course, comprised of brebis and goat cheeses, is also amazing. Some people complain about the waiting time between courses but don't forget that everything is cooked from scratch.
