Description: Between different aromas and flavors, like the different seasons, Puglia’s kitchen steps forward like a lightweight dance between earth and sea. Among the white stones and an always tempered climate, its food, today as yesterday, reveals to be a real pleasure and a beauty cure. A delicate maneuvering took us years, to disclose the trick of the ancient dishes the women used to prepare for their husbands, coming home from hard days of work on the fields. The recipes are actualized according to our creative taste, but they guarantee that connection with tradition that astonishes and satisfies. A kitchen with female cooks at “0 Km” and not with chefs, because the nourishment of the body and the soul are the task that require the precision and the sensibility of a woman and of a mother..The dishes are prepared every day with the products of the farm: from the citrus grove of the 17 century we obtain the fruits for the jams; with the durum wheat in addition to the famous bread from Puglia we prepare by hand many types of pasta; along the trails of the estate, among the centuries-old olive trees and the dry-stone wall grow asparagus, tassel hyacinth, pumpkin, sprout of butcher’s broom, artichoke, legumes and “wild chicory”; from the vegetable garden behind the dining room the herbs. It won’t happen to eat the same things twice, not even if your stay lasts two weeks. Every day there is the taste of discovery with which ‘Il Frantoio’ conveys the typicalness of the harvest through the creative taste of the kitchen. Seated in the restaurant, with the stone vaults and floors, next to the fireplace, it might happen to you to get orzotto (made with pearl barley) with pumpkin and sprout of butcher’s groom, wild artichokes cooked in wine and tassel hyacinth with orange honey or laganari (type of fresh pasta) with filled tomatoes or maybe lamb with potatoes from the crock pan. All of this irrigated with excellent wines carefully selected form the best producers of Puglia. A lunch or a dinner at the “Frantoio” is concluded with one of the 35 different liqueurs prepared in the Masseria, but be careful to not miss the one flavored with olive leafs, it is unique in the whole world!During the summer months this theater of culture and gastronomy moves in the open air, in the central courtyard and as a guest said one day: “We are in a painting”*Open also for external guests

My friend got married here last weekend and we stayed for the 3 nights around the wedding and it was just amazing. From check in to check out the staff couldnt do enough especially Giuseppe. it was like we had arrived in a little bit of heaven.

What made it more amazing was the bride and groom had hired the whole masseria out on the saturday eve with a quite astonishing 8 course meal with wine. The food was simply delicious. There was far too much but the quality was just fantastic and i eat out and in a fair few countries and this was just something special!! After the meal we had their homemade liqueur and danced away!

I didnt want to leave this amazing haven. If you go to Ostuni stay here!

We ate here as part of a wedding party and were delighted by the standard of food and service.The chef sources as many ingredients as possible from the Masseria, supplementing their own, home grown ingredients with quality local produce and the results are mouthwatering. The wines are local and expertly chosen to match the food. The location is stunning and there is excellent attention to detail.

So glad we came to the Masseria for a six-course dinner on Saturday night. It was definitely one of the highlights of our week-long Puglia trip and one of the most delicious meals I've ever had. Every one of the dishes was fantastic and innovative, and all made with local ingredients. The courses got even better and better as the meal went on so would advise to save some room for the end (and definitely come hungry). The masseria itself is beautifully redone and magical - it would be a great place to stay, I imagine. And all very well priced considering the superb quality of wine & food (and the quantity!)

We visited this ancient Masseria on a walk organised by the Parco delle Dune Costiere within which the Masseria is located. The day was advertised as looking at the culinary herbs found within the olive groves, followed by lunch. We spent a pleasant 3 hours wondering through the ancient olive trees with wardens from the park identifying herbs a a few early orchids.
This was followed by a display of all culinary plants found within the area and a tour of the Masseria with Armando, the owner, a sprightly gentleman with great knowledge of the history of the Masseria and the area.
Then to lunch; before arriving I had informed them of my wife's food allergies, to which they said no problem. The meal started with a deep fried pasta and three interesting relishes, followed by fave pure with greens (herbs identified during our walk). Next came the pasta, home made ribbons embedded with fennel seeds and a wild herb and sausage ragout. After a short break there were veal Granatine on chicory (absolutely delicious). The final offering was a mouth watering creamy dessert drizzled with bitter chocolate accompanied with a fantastic olive leaf liquor (a specialty of the Masseria) and liquor soaked olives - WOW. This was all accompanied with a fruity Primitivo from Gioia del Colle.
This Masseria is a great find and we will return as the menu changes daily.
Point of NOTE, No menus are supplied until the end of the serving - every course is a surprise after all.

We had the 6 course dinner & wine pairing at Masseria Il Frantoio on our last night in Italy. The food was unbelievable - fresh, creative, with so much attention to detail in the conception of the menu, and in the presentation. Our menu included stuffed zucchini flowers, white eggplant parmigiana, a mussel and pumpkin risotto, lamb and potato tagine, a pomegranate and cabbage salad, and a chocolate tart. D E L I C I O U S !!! Giuseppe was our masseria and gastronomic guide for the evening - he was passionate about Apulia, the Masseria, and incredibly knowledgable. Our only complaint is that we didn't come earlier in our stay! This is not to be missed if you're staying anywhere near Ostuni.
