This restaurant opened recently in late January 2014. It's run by Nosara native chef Jairo Cordero Hernandez and his partner, Diana Ruiz. The space is a charming open-air room overlooking a tropical garden and pool within the Villas Esperanza complex. The bar/restaurant happens to be right beside a holiday unit we are renting, so it's particularly convenient to have the option of eating breakfast, lunch and/or dinner without having to walk more than a few steps. The food is fresh and tasty. Over a number of meals, we've sampled a number of the menu items. For breakfast, we've enjoyed the Costa Rican special (gallo pinto, eggs, fried plantain), fresh fruit plate, and omelette; for lunch, we ate the casados - fish and beef (with excellent black beans, rice, plantain and tortillas); and over a few dinners, we've had the smoked pork chops with pineapple and plum sauce (particularly delicious), tender beef tenderloin, chicken breast stuffed with spinach (also a highlight), fish tacos, and seafood pasta. We wouldn't admit to having eaten dessert, but if pressed, we'd certainly recommend the chocolate brownie with ice cream and bananas flambé. For the most part, our meals were very good to excellent. We always sit at the corner table overlooking the garden. The service is excellent and Jairo and Diana are a lovely couple eager to make a go with this latest venture. I'd highly recommend this hidden gem for anyone looking for a tasty meal in a quiet/magical setting. There's ample parking as soon as you enter the Villas Esperanza complex, then walk toward the main reception building and along the garden path to Fusion. They're open for breakfast, lunch and dinner.
