However lovely the Moulin de la Camandoule is in summer, I have to admit loving it in winter. I spent 11 nights while working at the antiques fair in the village of Fayence, which from my window and the grounds I could see shining at night in that Provençal Christmas way. The room was as cosy as last time (excellent AC/heat control). The staff were more than helpful, both in the hotel and restaurant. The winter menus were superb, and everyone including manager Nicolas, Stéphane, the chef and waiters were committed to making my stay as pleasurable as could be.

The bar, occupying the ground level in what was once the guts of the 17th-century olive oil mill, and where the metal and stone works are visible, was absolutely gorgeous in the winter. Beautiful Christmas tree, kindly blazing fire in the enormous fireplace, a perfect place to retreat to after a chilling day's work, use the wifi, have a cocktail, enjoy the savoury appetizers, read and stare at the flames. Outside, moonrise over the picture-perfect village at night, lulling sound of the small river which once powered the mill, and hoar frost on the grounds in the morning, songbirds as befits the best of "Provence".

Loved it so much, we stayed an extra night at the end for a more elaborate dinner, which, no surprise, was succulent. Please note this review refers to both hotel and restaurant. The excellent value of the experience in the winter -- not to be underestimated!

We have stayed in this hotel for many years. It is set on the outskirts of the charming small town of Fayence in Var in extensive grounds with a large swimming pool in a cherry orchard. The builing, once a water mill, is full of character. Cuisine is very good and especially enjoyable when dining on the terrace, which is usually possible. The rooms are nicely decorated although most are of modest size. The area includes many facinating mountain villages and the nearby town of Fayence has lots of interest, especially on market days.

A real gem near Fayence. The place is a renovation of an old olive oil press factory, designed in perfect care to give you a country-side and a posh feeling at the same time. The 100 euro room (including breakfast) was at basic level, but the extra large bathtub made the difference.  One of the best things about this place is the super super nice and helpful staff. The second thing is the wonderful restaurant there. This was the first time that we could enjoy a 6 course chef dinner as vegetarians.
Although we had slept on better mattresses, staying at this place was true bliss for us...

Just the way it should be.

Pros
+ Price, not to expensive considering what you get.
+ Great restaurant! Food was excellent. Price was good as well.
+ Cozy rooms
+ Easy to find with car


Cons
- You need to book it well in advance since the places is fully booked during high season.
But i guess that's a good thing :)

Nicolas and his team were determined to make my week-long stay with them in August, 2012, as agreeable as possible. If I needed amenities, if I wanted to dine in a quiet place indoors while the restaurant fans (of which there are many; you need to reserve whether a hotel client or not) enjoyed the summer evening air, if I requested date-juggling during the reservation process.....everything was made possible, and with a smile. Warm customer service reigns. The young people studying hospitality couldn't have had better training and it was a delight to meet them. I was in Fayence for work and the staff were more than helpful accomodating my needs whereas their specialty may be people on vacation...so though I adored the restaurant, and benefitted greatly from the calm, I never got to try the infamous restaurant service by the pool since I was gone all day! However a refreshing swim at sunset was made possible by following instructions on how to open the secure child-proof gate surrounding the pool and restaurant on the beautiful grounds. In the salon/bar area near the restaurant, you can find some documentation about olive oil production in the area from the 17th century onwards. And original elements (press, grinders, original mill elements...). Very warm ambiance. Whether I work again in the village, I look forward to a return stop at the beautiful, historic Moulin in the autumn.....

The food was top notch. My wife and I agreed we had the best prawn there since our years in Asia. The staff seems a bit overwhelmed with even though they had only about a dozen table. We did not get a menu for 20 minutes. We attributed it to the slower country pace of life perhaps. If you are not use to it, dinners in France seem to take about 3 hours. It was pleasant and relaxing. The servers were very flexible nonetheless and allowed us to move inside to eat as my wife is allergic to bugs. They even offered a version of after-bite that worked really well.

Overall, we really enjoyed our meet, sitting privately inside (with the a/c!). And would consider it fortunate should be have the opportunity to return and eat here again.

We were lucky enough to stay at this wonderful hotel restaurant for three nights in May and it was truly relaxing and comfortable experience. We stayed in the Tour room which had a bed in the upper room connected by a spiral staircase to the sitting room that had a comfortable couch and a television. We didn't take the cases up the stairs as it was very tight but managed perfectly well in space on the lower floor. Also the stairs are steep and the bathroom is on the lower floor which might not be convenient for everyone. The hot water took a long time to reach this room as it is at the far end of the building, this didn't bother us as the feeling of being separated from the hotel added to our pleasure.

The sitting area in the patio is wonderful and was full of flowers and the staff were very considerate and brought cushions to sit on when we went out to enjoy the garden. The internet reception was a bit iffy and we had to be in the bar, garden or reception to get it, good excuse not to look! Breakfast could not be faulted, the yoghurt is the best I have ever tasted, there was fresh juice, pastries, bread, cheese, meat and great coffee. We also ate at the restaurant during our stay and it was excellent, cant wait to go back for another longer break.

Room Tip: Problem with stairs then don't book the Tour room.
