By and large, it was the best culinary experience I ever had. Located on the top of a gorgeous hill, next to the tiny village of Chaudes Aigues, the Serge Vieira restaurant is settled in a beautifully renovated castle. Once we arrived for dinner, on a Saturday night, we were greeted by Marie-Aude, Serge's wife. She lead us to our table, in a cozy and modern dinning room with places for no more than 50 people. Then started our culinary immersion, with several dishes of our M menu. Tastes and food presentation were outstanding. Wine pairing was good as well. For this dinner, we stayed in a hotel in Chaudes Aigues. I'd recommend, however, to try to book one of the three amazing rooms in Serge Vieira's own castle.
