On the island of Ischia rabbit used to be raised in a particular form, linked to the demands of agricultural work in vineyard and fields, which has been shown to produce meat with superior characteristics: the “coniglio di fossa”. They used holes in the ground for breeding rabbits, free to dig, and fed them with grass of the place. At the same time the soil dug and moved by the rabbit became more fertile.
