New Sammy's Cowboy Bistro, locally known as Sammy's, is located north of Ashland in the little town of Talent. Sammy's was just recently expanded beyond the six tables that served consistently great food for about 15 years. The chef Charlene brings the kind of cuisine San Franciscans have become familiar with through Alice Waters.  One difference is that rather than having many local farmers bring the produce, Charlene and her husband Vernon grow much of it on site, and they do it like the rest of the food there--organically. There is an extensive wine collection of over 3,000 different wines. With the new addition, they are now also serving lunch Wednesday through Sunday with six or seven offerings at $15 per main dish. Be aware that dinner prices are high and expect to pay a minimum of about $50 per person. The menu is limited and no substitutions are allowed. It is a unique experience with the feel of a French country bistro.  A great spot for fine dining, great wine, great service and because of its location just outside town, one of the best kept secrets.
